Are Boiled Bagels Better?
In my experience…yes! Boiling gives the bagels a depth of flavor and color that steam cannot! If you like a light crisp then I recommend to boil your bagels for about 30-60 seconds in bubbling water! If you like more of a thicker crust, then try boiling them about 2 minutes! Of course a great dough recipe is essential to have the right flavor, mouthfeel, and chew! What makes a great bagel is many, many factors working together! You cannot shortcut great food! Many places will bake their bagels in a Combi Oven where they can steam and bake with the press of a button. Although extremely convenient and making the laborious task of bagels more easy, in my experience, this short-changes the potential of the product!
